This one came from Easy Recipes by Lila (@easyrecipesby_lila), and Dennis spotted it mid-scroll — a stuffed chicken that actually looks like the photo promises. Chicken breasts get a deep pocket, then a filling of mushrooms sautéed in garlic butter, folded into cream cheese and mozzarella while they're still hot. Season the outside, sear it golden in butter, finish it low — and when you slice it open, the middle is molten. I ran the numbers and a serving lands around 58 grams of protein (my estimate, not hers). Weeknight-easy, restaurant plate.
Two things. First, the mushrooms cook down until the pan is nearly dry before they ever meet the cheese, so the filling stays thick and rich instead of leaking out in the skillet. Second, the sear matters: that deeply golden crust is the texture contrast against the creamy middle, and finishing the chicken low and covered keeps the breast juicy while the filling melts through. It's comfort food math — high protein, low fuss, no dry chicken.
