Creamy Chicken & Spinach Pasta

Some dinners just look like a good decision. A skillet of golden chicken, a sauce that turns silky and rosy the second the cream hits it, spinach wilting into the pan like it was always meant to be there. This creamy chicken and spinach pasta came to me as a twenty-second Short from mjkitchen, and it had that instant "we're making this week" energy — so I rebuilt it in my kitchen with full amounts, and it earned the hype.

Why this one works

The whole dish is one skillet plus a pot of pasta water, and the order of operations is the flavor. The chicken sears first and comes out to rest, which leaves all those golden, savory bits in the pan — exactly what the mushrooms and onion cook in next. Cherry tomatoes and fresh spinach go in and collapse down, tomato paste gets a full minute to deepen, and then the cream pulls everything into a sauce that coats every tube of penne.

The finish matters too. The chicken is sliced on the bias after resting — never cut in the pan — and fanned over the top of the plated pasta with a shower of parmesan. It eats like a restaurant plate, but it is on the table in about thirty-five minutes.

The numbers

Each serving lands at roughly 56 grams of protein with about 780 calories, plus an estimated 76 grams of carbs and 31 grams of fat. One honest note: the original Short listed the ingredients without quantities, so the amounts on the card are my standard reconstruction and the nutrition figures are our estimates, computed from those ingredients — not the creator's.
