Some recipes stop you mid-scroll, and this one — from Dasha Dashkevich (@foodiedasha) — did it with a sound: the crackle of a flour tortilla fried until it shatters. Her crispy beef tacos take everything good about taco night and add the one thing tacos usually lack: crunch that holds up to the last bite. I ran the numbers on a serving of two and it lands around 32 grams of protein (my estimate, not hers) — weeknight food that actually keeps everybody full.
The trick is the fold-and-fry. Cheese goes down first, beef over it, more cheese on top, then the tortilla folds and fries in a little oil until the outside is golden and crisp and the inside is a sealed, melty pocket — no filling escaping out the back, no soggy shell. The avocado crema does the rest: avocado and Greek yogurt blended with cilantro and lime, cool and tangy against the warm, spiced beef. Twenty-five minutes, start to finish.
