Crispy Garlic Butter Parmesan Potato Wedges

Why it works

Two cheap tricks turn an ordinary roasted potato into the crispiest wedge you have ever pulled out of a home oven. First, a short parboil in salted water spiked with baking soda softens the outside of each wedge; then a hard shake in the colander scuffs those soft edges into a starchy paste. In a 425°F oven, cut-side down, that paste fries itself into a shattering, craggly crust while the inside stays fluffy. The finish is pure steakhouse: melted butter with fresh garlic drizzled over the hot wedges, then a shower of real Parmigiano-Reggiano and parsley. It is a side dish — about seven grams of protein a serving by our math — but it is the side everybody reaches for first.

The recipe

Ingredients

Steps

  1. Cover the wedges with cold water in a large pot, add the salt and baking soda, and simmer 8 to 10 minutes until just fork-tender outside.
  2. Drain in a colander, let the steam roll off for 3 minutes, then shake vigorously to rough up the edges.
  3. Toss in a large bowl with the olive oil and all the dry seasonings until evenly coated.
  4. Roast at 425°F on a parchment-lined sheet, cut-side down and spaced out, 30 to 35 minutes, flipping halfway, until deep golden and crisp.
  5. Drizzle with the garlic butter, shower with the parmesan and parsley, and serve right away.
