Greek Chicken & Rice Bowls: The 52g-Protein Bowl That Tastes Like Vacation

Charred lemon-oregano chicken, a crunchy cucumber-tomato salad, and a big dollop of cool tzatziki over rice — this is the weeknight bowl that tastes like a vacation and still lands 52 grams of protein. The yogurt marinade does the heavy lifting, the hot pan does the rest, and dinner is on the table in about 35 minutes.

Why it works

It works because every part earns its place: the yogurt marinade tenderizes the chicken and carries the lemon-oregano flavor all the way through, the salad stays crisp against the hot chicken, and the tzatziki cools the whole bowl down. One pan, one cutting board, zero boring chicken.

The recipe

Ingredients

Steps

  1. Marinate chicken at least 2 hrs (overnight is best).
  2. Cook in a hot pan 4–5 min per side with lid on, until cooked through.
  3. Chop and toss the salad; stir together the tzatziki.
  4. Assemble: rice, sliced chicken, big scoop of salad, generous dollop of tzatziki.
