Healing Ginger Garlic Broth with Rice Noodles

Why it works

Some dinners fix the day, and this is one of them. Fresh ginger and garlic bloom in sesame oil, a rich chicken broth simmers with soy, rice vinegar, black pepper, and a touch of honey, and then mushrooms, shredded chicken, and bok choy finish it — ladled over tender rice noodles with green onions, cilantro, sesame seeds, chili flakes, and a squeeze of lemon. It is warm, soothing, and on the table in 30 minutes, with about 16 grams of protein in every bowl.

The recipe

Ingredients

Steps

  1. Cook the rice noodles in boiling water until tender; drain and set aside.
  2. Heat the oil in a large pot over medium heat. Add the garlic and ginger; sauté about 1 minute until fragrant.
  3. Pour in the chicken broth. Stir in the soy sauce, rice vinegar, black pepper, and honey.
  4. Bring to a boil, then lower the heat and simmer 10–15 minutes.
  5. Add the mushrooms; simmer about 5 minutes until tender.
  6. Stir in the shredded chicken, if using, and heat through. Add the bok choy or spinach for the last 1–2 minutes, just until wilted.
  7. Stir in the lemon juice off the heat and adjust the seasoning. Divide the noodles among bowls, ladle the hot broth over, and garnish with green onions, cilantro, sesame seeds, and chili flakes.
