Every October there's a dinner that gets the kids to the table without a single negotiation: stuffed peppers carved like jack-o'-lanterns. This year I gave the California Olive Ranch version a dad upgrade — a pound of ground beef browned right in with the shallot, exactly the swap their caption suggests — and it lands around 30 grams of protein a pepper (my estimate, not theirs).
The faces do the heavy lifting. Triangle eyes and a jagged grin turn an ordinary stuffed pepper into the main event of Halloween week, and carving them while the rice simmers means no extra time on the clock. The filling is the real deal, though: smoky chili-and-cumin rice cooked in broth, black beans, corn, and spinach folded in at the end, all of it under a broiled cheese cap. One pepper is a full meal — protein, grains, and vegetables in a package that grins at you.
