Lightened-Up Chicken Parmesan: The Crispy 45g-Protein Classic Without the Fryer

Lightened-Up Chicken Parmesan: The Crispy 45g-Protein Classic Without the Fryer

Chicken parm is a weeknight legend, but the breaded-and-fried version doesn't fit a high-protein plan. This one does: parmesan right in the breadcrumb crust, baked at 425°F until golden, finished with marinara and bubbly light mozzarella — 45 grams of protein, about 550 calories, and on the table in 35 minutes.

Why it works

The trick is splitting the parmesan. Half of it goes into the breadcrumb mix, where it crisps in the oven and delivers that salty, savory crust without a drop of frying oil. The egg wash (one whole egg plus two whites) glues the crust on tight. The other half of the parmesan goes on top with part-skim mozzarella for the last five minutes, so you still get the bubbly, browned finish. Serving it over whole-wheat or chickpea pasta sneaks in even more protein without changing the comfort-food feel.

The recipe

Ingredients

Steps

  1. Heat oven to 425°F (220°C). Season the chicken with salt and pepper.
  2. Dredge in the egg, then in the breadcrumbs mixed with half the parmesan. Place on a sprayed sheet pan.
  3. Bake 18–20 minutes until cooked through — no frying needed.
  4. Spoon marinara over each breast, top with mozzarella and the remaining parmesan; bake 5 minutes more until bubbly. Serve over pasta with basil.
