Smoky Garlic Bacon Cheeseburger Taco Cups

Some nights the group chat wants burgers and the kids want tacos, and nobody is willing to lose. These taco cups are how everybody wins. You press small flour tortillas into a muffin tin, bake them into crispy little shells, then load them up like the best bacon cheeseburger you have ever had — smoky garlic-seasoned beef, crumbled bacon, and a blanket of melted pepper jack — and finish them like tacos with sour cream, tomato, lettuce, and cilantro.

The whole pan takes about 35 minutes, and each three-cup serving packs roughly 44 grams of protein. This is a weeknight dinner disguised as party food, and it disappears like party food too.

Why the muffin tin works

A flour tortilla pleated into a muffin cup bakes into a shell that is crisp at the edges, sturdy at the bottom, and just chewy enough in the middle to hold a serious amount of filling. No deep frying, no special molds — and the shells bake while the bacon renders, so nothing waits on anything.

The smoky garlic seasoning

The beef gets a simple homemade blend: garlic powder, smoked paprika, onion powder, salt, and black pepper. The smoked paprika is the one doing the heavy lifting — it gives plain ground beef that backyard-grill flavor without opening the grill. Brown the beef in the same skillet the bacon cooked in, and let it get properly dark and crisp at the edges before the seasoning goes in. That browning is where the flavor lives.

Fill, bake, crown

Spoon the hot beef straight from the skillet into every shell, scatter the crumbled bacon over each one, and cover all twelve with shredded pepper jack. Five to seven minutes back in the oven and the cheese melts down and bubbles over every cup. Then crown them while they are hot: a cool dollop of sour cream, diced tomato, shredded lettuce, and fresh cilantro. Serve three to a plate with extra napkins — the cheese pull is real.

Make them your way

Swap the pepper jack for sharp cheddar if heat is not your thing, or go half and half. Ground turkey works in place of the beef. And if you are feeding a crowd, the recipe doubles cleanly — just work in two muffin tins and rotate them halfway through the final bake.
