Garlic butter steak bites with a hard sear, folded into pillowy cheese tortellini and a silky Parmesan cream sauce — all built in the same skillet, right in the steak drippings. It eats like a steakhouse splurge and lands about fifty-one grams of protein a serving by our math. Rich, no question — this is the Friday-night one.
Ingredients
- 1 lb sirloin steak, cut into bite-sized cubes
- 20 oz cheese tortellini
- 2 tbsp olive oil
- 3 tbsp butter
- 5 garlic cloves, minced
- 1½ cups heavy cream
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp fresh parsley, chopped
Steps
- Cook the tortellini: Boil the cheese tortellini in well-salted water according to the package directions until tender and pillowy. Drain and set aside.
- Season the steak: Pat the sirloin cubes dry and season them all over with the salt and black pepper.
- Sear the steak bites: Heat the olive oil in a large skillet over high heat until shimmering. Sear the steak bites 2–3 minutes per side, until deeply browned. Remove to a plate and set aside — keep the drippings in the pan.
- Garlic butter: In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds, until fragrant.
- Start the sauce: Pour in the heavy cream and bring it to a gentle simmer in the steak drippings.
- Finish the sauce: Stir in the grated Parmesan and the Italian seasoning and keep stirring until the sauce is smooth, glossy, and creamy.
- Toss the tortellini: Add the cooked tortellini to the skillet and toss until every piece is coated in the sauce.
- Return the steak: Slide the steak bites and any resting juices back into the pan and gently fold everything together until warmed through.
- Serve: Garnish with the chopped fresh parsley and serve immediately, straight from the skillet or in warm bowls.
