Rotisserie Chicken & Mushroom Soup

~23g protein (est.)~255 cal (est.)~9g carbs (est.)~13g fat (est.)35 minServes 6

A cozy one-pot soup that turns a store-bought rotisserie chicken into a creamy, mushroom-loaded dinner in about thirty-five minutes. The mushrooms cook down until they are deeply golden, which gives the broth a rich, savory backbone, and a splash of milk plus a shower of Parmesan makes it silky without any heavy cream. Baby spinach wilts in at the end and a squeeze of fresh lemon keeps every spoonful bright.

Ingredients

Steps

  1. Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery and cook 4–5 minutes, until slightly softened.
  2. Brown the mushrooms: Add the sliced mushrooms and cook 5–6 minutes, stirring occasionally, until golden and their excess moisture has evaporated.
  3. Bloom the aromatics: Stir in the garlic, thyme, oregano, salt, and black pepper and cook for 30 seconds.
  4. Simmer: Pour in the chicken broth, bring to a gentle simmer, and cook 10 minutes, until the vegetables are tender.
  5. Make it creamy: Add the shredded rotisserie chicken, milk, and Parmesan. Simmer gently for 5 minutes, avoiding a rapid boil.
  6. Finish and serve: Stir in the baby spinach and cook 1–2 minutes, until wilted. Finish with the fresh lemon juice, garnish with parsley and extra Parmesan, and serve warm.

Dad tip: let the mushrooms develop a deep golden color before the broth goes in — that browning is where the soup gets its rich, savory depth.
