Bang Bang Salmon: The 20-Minute Dinner That Actually Gets Eaten

Salmon used to be the dinner my family pushed around the plate. Not anymore.

This is the salmon that changed that. It's creamy, sweet, a little punchy, and it goes from fridge to table in about 20 minutes — which, on a weeknight, is the difference between cooking dinner and ordering it.

I found this one from Lindsay Ostrom at Pinch of Yum — her Bang Bang Salmon with Avocado Cucumber Salsa — and it's been in the regular rotation ever since. Credit where it's due: she nailed this one.

Why it works

The sauce does all the heavy lifting: mayo, sweet chili sauce, garlic, and soy. Half goes on the salmon before it hits the oven, half gets saved for the finish. A quick broil at the end gives it those golden, caramelized edges. Then the avocado cucumber salsa lands on top — cool, fresh, a little lime — and cuts right through the richness. It's the kind of balance that makes people go back for seconds.

And the numbers are dad-friendly: roughly 35 grams of protein per serving, four servings, one pan.

The recipe

Ingredients

Steps

  1. Season salmon; place on a lined baking sheet.
  2. Mix mayo, sweet chili, garlic & soy — set half aside.
  3. Brush sauce on salmon; bake 10 min at 400°F, broil 2–3 min.
  4. Toss avocado, cucumber, cilantro, lime, salt & honey.
  5. Serve over rice with salsa, reserved sauce & chili crisp.

If you make it, tell me how it went — and if your family has a salmon skeptic, this is the one to try on them first.
