Chicken Shawarma Bowls: Charred Chicken, Creamy Garlic Sauce, 42g Protein

This is the weeknight version of the shawarma you crave from the takeout spot — charred, spice-crusted chicken thighs over fluffy basmati rice with cucumber, tomatoes, red onion, and a garlic-yogurt sauce you will want to put on everything. Thirty minutes, one pan, forty-two grams of protein.

Why it works

The yogurt marinade does two jobs: the acid tenderizes the chicken while the shawarma spice builds a crust that chars fast in a hot pan. The sauce uses the same yogurt, so nothing goes to waste — garlic, herbs, and lemon turn it into something closer to a condiment than a topping. Rice, crunchy veg, and warm pita on the side make it a full bowl, not a snack.

The recipe

Ingredients

Steps

  1. Marinate chicken in half the yogurt, shawarma spice & half the lemon, 20 min (or overnight).
  2. Sear or broil until charred & cooked through; rest 5 min, then slice.
  3. Stir remaining yogurt with garlic, herbs & remaining lemon for the sauce.
  4. Build bowls: rice, chicken, cucumber, tomatoes & onion; drizzle with sauce.
