Creamy Tuscan Shrimp Pasta: The 25-Minute Weeknight Pasta That Tastes Like All Evening

Some weeknight pastas taste like a shortcut. This one tastes like you spent all evening on it: butter-seared shrimp, garlic and cherry tomatoes softened in the same pan, then a Parmesan cream sauce with spinach wilted straight in — all tossed with fettuccine in about 25 minutes. Forty grams of protein, about 620 calories, and one pan doing most of the work.

Why it works

The pan never gets washed between steps, and that is the whole trick. The shrimp sear first in butter with Italian seasoning, leaving browned butter and seasoning in the pan. Garlic and tomatoes soften in those drippings, the cream picks all of it up, and Parmesan melts in to thicken the sauce while the spinach wilts. A splash of reserved pasta water at the end loosens everything so the sauce coats every strand instead of sitting on top. Save that pasta water — it is the difference between a sauce that clings and one that slides off.

The recipe

Ingredients

Steps

  1. Boil fettuccine until al dente; reserve ½ cup pasta water.
  2. Sear shrimp in butter with Italian seasoning, 1–2 min per side; set aside.
  3. In the same pan, soften garlic and tomatoes, pour in cream, simmer 2 min, then stir in Parmesan and spinach until wilted. Toss with pasta and shrimp, loosening with pasta water as needed.
