Italian Sausage Gnocchi Soup: The 12M-View Cozy Bowl
This one broke the internet — twelve million views, and the second I saw it, I knew exactly why. Pillowy gnocchi, browned Italian sausage, a broth so creamy it should be illegal, all in one pot. Meghan Kay called it the coziest soup you'll make all season, and I'm not arguing.
Why it works
Everything happens in a single pot, and the order does all the heavy lifting. The sausage seasons the whole soup as it browns — its fat becomes the flavor base. Tomato paste goes in with the seasonings to add depth without tasting like tomato soup. Bone broth gives it body, the gnocchi cooks right in the broth (no separate pot, and it soaks up all that sausage flavor), and the cream plus parmesan at the end turn it silky. Spinach folds in last so it stays bright green and fresh, not sad and army-colored.
The recipe
Ingredients
- 1 lb mild Italian sausage
- 1 yellow onion, diced
- 1–2 tbsp minced garlic
- 1 tbsp tomato paste
- 2 cups beef or chicken bone broth
- 16 oz dry potato gnocchi
- 2 cups heavy cream
- 3 oz grated parmesan cheese
- 2 cups chopped fresh spinach
- Olive oil, salt, pepper, Italian seasoning, oregano, parsley, garlic & onion powder, crushed red pepper (optional)
Steps
- Heat a drizzle of olive oil in a large pot over medium heat. Cook the diced onion until soft and translucent; add the garlic and stir 30 seconds.
- Add the Italian sausage and break it into small crumbles as it browns.
- Stir in the tomato paste and all the seasonings until everything is coated.
- Pour in the bone broth and bring to a boil.
- Add the dry gnocchi directly to the boiling soup; cook 2–3 minutes until just tender.
- Reduce heat to low. Stir in the heavy cream, then the grated parmesan, stirring until melted and silky.
- Fold in the chopped spinach and simmer on low 10 minutes to thicken slightly. Serve immediately with extra parmesan and crusty bread.
