Italian Sausage Gnocchi Soup
~28g protein (est.)~650 cal/serving (est.)35 minServes 6
The coziest soup you’ll make all season. Italian sausage browned with onion and garlic, simmered in bone broth with pillowy gnocchi, then finished with heavy cream, parmesan, and spinach — one pot, pure comfort. (Meghan Kay’s viral recipe, 12M views and counting.)
Ingredients
- 1 lb mild Italian sausage
- 1 yellow onion, diced
- 1–2 tbsp minced garlic
- 1 tbsp tomato paste
- 2 cups beef or chicken bone broth
- 16 oz dry potato gnocchi
- 2 cups heavy cream
- 3 oz grated parmesan cheese
- 2 cups chopped fresh spinach
- Olive oil, salt, pepper, Italian seasoning, oregano, parsley, garlic & onion powder, crushed red pepper (optional)
Steps
- Sauté the base: Heat a drizzle of olive oil in a large pot over medium heat. Cook the diced onion until soft and translucent; add the garlic and stir 30 seconds.
- Brown the sausage: Add the Italian sausage and break it into small crumbles as it browns.
- Season: Stir in the tomato paste and all the seasonings (salt, pepper, Italian seasoning, oregano, parsley, garlic & onion powder, crushed red pepper if using) until everything is coated.
- Add broth: Pour in the bone broth and bring to a boil.
- Cook the gnocchi: Add the dry gnocchi directly to the boiling soup and cook 2–3 minutes until just tender.
- Make it creamy: Reduce heat to low. Stir in the heavy cream, then the grated parmesan, stirring until melted and silky.
- Finish: Fold in the chopped spinach and simmer on low 10 minutes to thicken slightly. Serve immediately with extra parmesan and crusty bread.
