Loaded Baked Sweet Potato: The Post-Gym Meal That Actually Fills You Up

Chicken and rice. Again. If your post-gym meal feels like a punishment, this one's for you.

I found this from Jack Early (@itsjackearly) — his loaded baked sweet potato reel — and it's the post-gym meal that actually fills you up. One bowl, about 55 grams of protein, and it tastes like real food.

Why it works

The sweet potato is the base — slow carbs, fiber, and it actually keeps you full. The seasoned meat brings the protein. Then the toppings do the rest: melted cheese, fresh pico, cool avocado, and a little crumbled cotija for salt. Every bite is different, which is the whole trick — nothing about this eats like diet food.

And the numbers are dad-friendly: roughly 55 grams of protein, one bowl, about 35 minutes start to finish.

The recipe

Ingredients

Steps

  1. Halve the sweet potato lengthwise, spray with oil, season with salt & pepper, and place cut-side down on a lined baking sheet.
  2. Bake at 400°F for 25–30 minutes, until the flesh is tender.
  3. Brown the ground beef with chili powder, cumin, garlic powder, salt & pepper. Drain any fat.
  4. Mash the sweet potato flesh with a fork right in the skin. Top with shredded cheese, then the seasoned meat.
  5. Add pico de gallo, fanned avocado slices, and crumbled cotija or feta. Eat straight from the bowl.

If you make it, tell me how it went — and if your gym bag has a shaker bottle and a sad container of chicken and rice in it, this is the upgrade.
