~55g protein (estimate)~35 minServes 1
The post-gym meal that actually fills you up. Baked sweet potato, seasoned meat, pico, avocado, and cheese — one bowl, no sad chicken and rice.
Ingredients
- 1 large sweet potato
- Olive oil spray
- Salt & pepper
- ½ lb lean ground beef (or turkey)
- 1 tsp chili powder · ½ tsp cumin · ½ tsp garlic powder
- ½ cup shredded cheese
- ½ cup pico de gallo
- ½ avocado, sliced
- 2 tbsp crumbled cotija or feta
Steps
- Prep the sweet potato: Preheat oven to 400°F. Halve the sweet potato lengthwise, spray with oil, season with salt & pepper, and place cut-side down on a lined baking sheet.
- Bake: Bake 25–30 minutes, until the flesh is tender when poked with a fork.
- Cook the meat: While it bakes, brown the ground beef with chili powder, cumin, garlic powder, salt & pepper. Drain any fat.
- Load it up: Mash the sweet potato flesh with a fork right in the skin. Top with shredded cheese, then the seasoned meat.
- Finish: Add pico de gallo, fanned avocado slices, and crumbled cotija or feta. Eat straight from the bowl.
