Shrimp Fajita Bowls: 40g of Protein in a Sizzling 20-Minute Skillet

Some weeknight dinners taste like a shortcut. This one tastes like a restaurant fajita platter landed in a bowl — smoky charred peppers, snappy shrimp, a big squeeze of lime — and it still packs roughly 40 grams of protein and hits the table in about 20 minutes.

Why it works

Shrimp is the weeknight cheat code: it goes from raw to pink in about three minutes, so the protein is basically instant. A ripping-hot cast-iron skillet does the flavor heavy lifting, charring the peppers and onion with smoked paprika, cumin, and cayenne. Cauliflower rice keeps the bowl light, and a scoop of guacamole plus lime juice off the heat ties the whole thing together.

The recipe

Ingredients

Steps

  1. Heat oil in a cast-iron skillet; sauté peppers, onion and spices 5–7 min (add garlic near the end so it doesn't burn).
  2. Raise the heat, add tamari and shrimp; cook about 3 min until pink and cooked through.
  3. Finish with butter and lime juice off the heat.
  4. Serve over cauliflower rice with guacamole.
